The improvement of the microbiological quality of food products on the Polish market is a result of the systematic introduction and improvement of food safety assurance systems. The present paper discusses tools of predictive microbiology, i.e. software packages included in ComBase (www.combase.cc). These tools allow for quantitative assessment of microbiological hazard, like the presence of food borne pathogens in dairy products. The example of predicting the growth of bacteria from the species of Yersinia enterocolitica in cottage cheese during a few stages of production is presented. Tools in the form of software packages predicting the growth of microorganisms enable supporting the food safety assurance systems at every stage of production.
