Badając rozmrażanie ziemniaka w formie płyty i walca oraz wołowiny w formie płyty przeprowadzono analizę obliczeniową modeli Pham'a i Tao przystosowując je do wyznaczania czasu rozmrażania. Wyniki badań wskazują na lepszą dokładność modelu Pham'a (średni błąd ±7,17%) w stosunku do modelu Tao (średni błąd ±19,37%) i na jego przydatność do prognozowania czasu rozmrażania.

The aim of this paper was to carry out the analysis of Pham and Tao's calculation models. These models are used to estimate the time of freezing and defrosting of agricultural products and food. Defrosting process of the potato, which had been frozen before in shapes of a plate and a cylinder, was investigated. Defrosting was carried out in water and in the air until the temperature in the centre of the product reached 10°C. After completing the experimental studies and calculating the defrosting time, preceded by determing the heat penetration coeffcient, the analysis of errors of defrosting time determination and the investigation of both populations were carried out. In these investigations, proper parametric and non-parametric tests, including the Kolmogorov-Smirnov test, were used. The studies proved the practical usefulness of Pham's model for estimating the defrosting time. The Tao model did not show such suitability. Test results also proved the lack of statistically documented differences between calculation results and the real data for the seven investigated pairs of data collections.
