Porównano skład chemiczny boczniaka ostrygowatego i pieczarki dwuzarodnikowej. Oznaczono zawartość wilgoci, popiołu całkowitego, związków azotowych, skład aminokwasowy, skład kwasów tłuszczowych i wybranych składników mineralnych.

The aim of the work was to compare the chemical composition of oyster fungus (Pleurotus ostreatus Jacq. ex Fr. Quel) and field mushroom (Agaricus bisporus Lge. Sing). The contents of moisture, total ash, nitro compounds, amino acid composition, fatty acids and selected minerals were determined. The content of calcium determined in our study was by 1,5 times, higher in oyster fungus than in field mushroom. Considering percentage contents of individual fatty acid groups, mono- and polyunsaturated acids dominated and accounted for 79,9% in oyster fungus and 79,6% in field mushroom; the content of saturated fatty acids determined in our study was 20.56% in oyster fungus and 16.61% in field mushroom.
