W artykule przedstawiono surimi z uwzględnieniem historii jej powstania i rozwoju. Omówiono przydatność technologiczną surowców rybnych oraz scharakteryzowano proces technologiczny. Podano rodzaje i klasy jakości surimi.

In the paper there is given the surimi technology with regard to history of its formation and development. Technological usefulness of different fish raw materials and manufacturing process are described. There are also presented kinds and classes of surimi quality.
