Wykorzystując metodę wywiadu o spożyciu z ostatnich 24 godzin, oceniono wartość odżywczą tłuszczów występujących w całodziennych racjach pokarmowych (CRP) 803 kobiet i 443 mężczyzn z regionu Wielkopolski. Badane racje pokarmowe charakteryzowały się prawidłową wartością energetyczną. Udział energii z tłuszczu w CRP przekraczał 30% z maksimum wynoszącym blisko 37% w grupie mężczyzn. Wartość stosunku kwasów wielonienasyconych do nasyconych (P/S) w racjach pokarmowych kobiet i mężczyzn była zbliżona i wynosiła około 0,5. Badane racje pokarmowe różniły się zawartością cholesterolu pokarmowego (kobiety - 374 mg vs. 514 mg - mężczyźni). Udział 12 grup produktów w pokryciu zapotrzebowania na energię, tłuszcz oraz wybrane kwasy tłuszczowe był podobny w CRP kobiet i mężczyzn.

The study was carried out in a group of 803 females (mean age 50.4 years, mean body mass 66.1 kg, BMI 24.9) and 443 males (mean age 54.4 years, mean body mass 79.6 kg, BMI 26.2) from the Wielkopolska region. The nutritional value of fats in daily food rations was assessed and additionally and analysis was performed of the consumption pattern of certain product groups and their share in covering of the requirements for dietary fats and certain groups of fatty acids. The studied food rations had adequate energy value. The per cent of energy from fats in the daily food rations was above 30%, with maximal value nearly 37% in the male group. The interrelations between saturated, monounsaturated and polyunsaturated fať.y acids were far from the recommended ones. Saturated fats were present in excess, while the content of polyunsaturated acids (including essential fatty acids) was over twofold lower. The ratio of polyunsaturated to saturated acids (P/S) had a similar value in the food rations of females and males, that is about 0.5. The studied food rations differed in their cholesterol content (females 374 mg, males 514 mg). The share of 12 product groups in covering of the requirements for energy, fat and certain fatty acids was similar in the rations of females and males.
