Oznaczono zawartość kwasu L-askorbinowego, kadmu i ołowiu w wybranych warzywach i ziemniakach z regionu północno-wschodniej Polski w 1993 r. W badanych warzywach wykazano obecność kadmu i ołowiu oraz stwierdzono dodatnią jak i ujemną korelację pomiędzy badanymi parametrami w zależności od rodzaju warzywa.

A survey was conducted to determine vitamin C, cadmium, and lead content of 70 samples of vegetables and potatoes. Vitamin C content of peelings was found to be higher (6.2 - 22%) than that of vegetables without peels. Average cadmium concentration was noted to exceed (from 1.1 to 3.9 times) the acceptable limit of this element. Cadmium content of peelings was observed to be higher (7.0 - 63.8%) than that of vegetables without peels. On the other hand, lead concentration was found to be contained within acceptable limit of this element (300 µg/kg). Lead content od peelings was noted to be higher (4.8 - 41.8%) than that of vegetables without peels. A positive correlation was observed: - between vitamin C and cadmium content, vitamin C and lead content, and cadmium and lead content in peelings of the celery, between vitamin C and lead content in peelings of the potato, between cadmium and lead content in potatoes without peels.
