W artykule omówiono wybrane metody pomiaru stanu wody w żywności. Przedstawiono metody oparte na zasadach równowagi termodynamicznej, metody termoanalityczne oraz metody jądrowego rezonansu magnetycznego. Zwrócono również uwagę na zalety i wady tych metod.

In the article selected methods to measure of water state in food was described. The methods based on the principles thermodynamic equilibrium, thermoanalitical and nuclear magnetic resonance methods are discussed. Additionally, advantages and defects these methods were alsopresented.
