The effects of Ultra High Temperature (UHT) and pasteurization treatments on nutritive composition (protein, fat, lactose, vitamins, some minerals) and microbiological contamination (Total Bacteria Count, Faecal Bacteria) on 54 milk samples were examined. The detected changes of nutrient content m UHT-treated milk as comapred with raw milk were not significant except for vitamin В and vitamin C. The total bacteria count and faecal Coli index in the analysed milk samples were found to meet the national hygienic requirements.
