Liście pietruszki typu korzeniowego bezpośrednio po zbiorze zawierały 378 mg N-NO3 i 0,10 mg N-NO2/1000 g świeżej masy, typu naciowego odpowiednio 491 mg i 0,08 mg /1000 g. W okresie przechowywania zarówno w temperaturze pokojowej, jak i w warunkach chłodniczych notowano systematyczne obniżanie poziomu azotanów oraz wzrost zawartości azotynów. Uzyskane wartości kształtowały się następująco: po 15 dobach w temp. O-2oC, typ korzeniowy 100 mg N-NO3 i 0,34 mg N-NO2/1000 g, typ naciowy odpowiednio 416 mg i 0,36 mg/1000g; po 6 dobach w temp. 18-20°C, typ korzeniowy 314 mg N-NO3 i 0,24 mg N-NO2 /1000 g, typ naciowy odpowiednio 215 mg i 0,17 mg/1000 g.

Leaves of parsley of the root-type cv Berlinska and of the leaf-type cv Paramount were evaluated. Parsley was stored at room temperature (18°С ÷ 20°С, 85% ÷ 90% r.h.) and at 0°C ÷ 2°C, 95% ÷ 97% r.h. until the leaves were no longer suitable for processing. The content of nitrates and nitrites was measured immediately after harvest, after 1, 3 and 6 days of storage at room temperature and after 1, 3, 6, 9, 12, and 15 days in the cold store. Immediately after harvest, leaf blades of the root-type parsley contained 378 mg N-NO3 and 0.10 mg N-NO2/1000 g fresh weight. For the leaf-type parsley the respective values were 491 mg and 0,08 mg/1000 g. During storage, the level of nitrates gradually decreased and that of nitrites rose. After 15 days of storage at 0°C ÷ 2°C the content of nitrates reached 100 mg in the root-type and 416 mg/1000 g in the leaf-type parsley, and nitrites content was 0.34 mg and 0.36 mg/1000 g, respectively. After 6 days at 18o C ÷ 20o C the content of nitrates was 314 mg in the root-type parsley and 215 mg/1000 g in the leaf type, with nitrites reaching the level of 0.24 mg and 0.17 mg/1000 g, respectively.
