Fourteen sorts of vegetables were tested for their content of.total dietary fibre by the AOAC enzymatic sedimentation method. Mean fibre content of the vegetables varied from 0.75 g/100 g to 7.76 g /100 g fresh product. Mean fibre content of underground - growing parts of the vegetables were between 1.88g/100 g and 7.76 g/100 g fresh product. The lowest and the highest mean fibre value found in overground-growing parts of vegetables were, respectively, 0.75 g/100 g and 5.83 g/100 g. The lowest total dietary fibre content of the test vegetables was detected in cucumber, 0.75 g/100 g. and the highest in horseradish, 7.76 g/100 g.
