Increasing contamination of the environment leads to an intensification of civilisation diseases. An attempt of defining the notion "wholesome food" is made. The consumption range of fresh and processed fruits and vegetables in Poland is estimated. Introduction of monitoring as a system of investigations and food control is discussed. The monitoring range of fruits, vegetables and their processing products is given. Attesting organisation of fruit and vegetable raw materials and their processings as well as the control of production processes are presented.
