Świeże nasiona bobu o tzw. ,,dojrzałości mlecznej" w zależności od odmiany i stopnia dojrzałości zawierały 7,0 - 32,7 mg NO3 oraz 0,31 - 0,51 mg NO2 w 1 kg. Mrożonka po ugotowaniu 5,8 - 23,7 mg NO3 i 0,7 - 1,37 mg NO2/kg a konserwa sterylizowana odpowiednio 6,5 - 30,3 mg i 0,61 - 1,14 mg.

Nitrates and nitrites content of the raw material and final products of broad bean, was studied Frozen and sterilized canned product were made using 4 broad bean varieties harvested at the stage o 30% dry weight content and 2 varieties harvested at the stage of 25, 30, 35, and 40% dry weigh content. Irrespective of the variety used the seed maturity degree, the fresh broad bean was found to contair very small amounts of nitrates (7.0-32.7 mg/kg) and nitrites (0.31 -0.51 mg/kg). Blanching, freezing and storage of frozen product were noted to cause a slight decrease of nitrates content and a distinc increase of nitrites content. Cooking of frozen product was observed to decrease insignificantly the level of compounds under test (5.8 - 23.7 mg NO3/kg, and 0.70 - 1.37 mg NO2/kg). Blanching and preserving of the product in the air-tight containers caused only slight variations o nitrates level (when compared with raw seeds) while the nitrites content was found to be increased a the higher seed maturity degree. The following range concentration of nitrates and nitrites in thesi preserves were found: 6.5 - 30.3 mg/kg, and 0.61 - 1.14 mg/kg, respectively. Seed cotyledons of both final products were observed to contain lower nitrates and nitrites level than those of whole seeds
