Zawartość kadmu i ołowiu w wybranych produktach rynkowych z Legnicy była zbliżona do zawartości tych pierwiastków w produktach z terenów rolniczych województw centralnych, gdyż w większości były one sprowadzane z tych rejonów.

Cadmium and lead were determined by atomic absorpion spectrometry with atomization in graphite furnance after dry mineralization immediately from mineralizate solution. The content of cadmium and lead was determined in 204 vegetable, 46 potato, 41 apple and 115 cereal samples. The samples of selected food products from Legnica were collected between 1994 and 1996. In the vegetables, except potatoes, cadmium content was from 0.4 µg/kg (red beet) to 243.4 µg/kg (celery). Cadmium concentration in the potatoes and apples ranged from 7.8 to 78.7 µg/kg and from below the limit of detection to 12.3 µg/kg, respectively. In bread, macaroni, flour and groats, cadmium ranged from 11.3 to 59.8 µg/kg, from 21.6 to 76.0 µg/kg, from 9.0 to 51.8 µg/kg and from 10.6 to 39.2 µg/kg, respectively. In 204 samples of vegetables, except potatoes, lead content was from 2.6 µg/kg (carrot) to 654.6 µg/kg (celery). Lead concentration in the potatoes and apples ranged from 17.3 to 135.6 µg/kg and from 3.5 to 101.4 µg/kg, respectively. Amount of lead in cereal products were: in bread from 39.4 to 209.2 µg/kg, in macaroni from 88.3 to 431.2 µg/kg, in flour from below the limit detection to 275.2 and in groats from 44.6 to 94.6 µg/kg. Amounts of cadmium and lead in selected food products obtained from Legnica, particulary in potatoes, fruit and flour products, were similar to those in products derived from rural areas not exposed to industrial pollution, because a large part of these products was derived from those non-polluted areas. The amounts of cadmium and lead in these products only in several cases exceed the limit set out in relevant Polish regulations.
