Investigations on extrusion of ground barley grain with amaranth seed were carried out with the use of single-screw extruder INSTA-PRO 600 JR equipped with a measuring set for recording the working temperature and pressure. The effect of measured parameters on extrudate quality, expressed by its expansion ratio, was determined. It was found that an increase in amaranth grain content in the mixture resulted in decreasing of the maximal values of expansion ratio.
