Zbadano wpływ wielkości średnicy dyszy oraz wartości ciśnienia na parametry nastrzyku, przeprowadzonego z wykorzystaniem nowatorskiej, bezigłowej i bezdotykowej metody. Surowiec - karkówka wieprzowa o grubości 50 mm, został poddany nastrzykowi 10% roztworem solanki peklującej w temperaturze 4°C. Solanka składała się jedynie z chlorku sodu oraz azotanu (III) sodu. War-tości ciśnienia zasilania stosowanego podczas nastrzyku zawarte były w przedziale od 2 do 20 MPa, dla dysz o średnicach 610-4 oraz 110-3 m. Głębokość penetracji strumienia w głąb surowca wykazuje liniową zależność od wartości ciśnienia zasilającego dla obu średnic dyszy. Największą skuteczność procesu peklowania bezigłowego uzyskano przy zastosowaniu ciśnienia w zakresach 5-10 MPa oraz 2 do 5 MPa, odpowiednio dla dysz o średnicach 610-4 oraz 110-3 m.

The effect of nozzle diameter and pressure value on injection parameters of a new, touchless and needleless method was investigated. Raw material, porkneck 50 mm thick, was injected with 10% solution of curing brine at 4°C. The brine was composed of only sodium chloride and nitrite. The pressure of the injection ranged from 20 to 200 MPa, for the nozzles with diameters 610-4 and 110-3 m. The amount of brine introduced during single injection with needleless method was largely influenced by nozzle outflow diameter. Slight change of diameter, from 610'4 to 110 3 m, resulted in about fivefold increase in flow intensity. The influence of correct choice of nozzles diameter and their proper technical maintenance was much more important than the influence of feeding pressure value. Depth of stream penetration into the raw material showed linear dependence on feeding pressure for both types of nozzles. The wider the nozzle outflow the higher the difficulty in obtaining precise depth penetration of brine into the raw material. As a result, the most effective was injection within the pressure ranged from 5 to 10 MPa and from 2 to 5 MPa, for the nozzles with diameters 610-4 m and 110-3 m respectively.
