In the present study various types of ELISA methods that utilized commercially available polyclonal antibodies for estimation of the gliadin fraction contents in wheat grains Triticum aestivum were examined. The results show that because of cross reactions utilized antibodies are not suitable for the estimation of gliadin contents in gliadin-glutenin extracts. To avoid undesirable, non specific bounding between other extracted proteins special attention should be paid to sample preparation when polyclonal antibodies are used in the ELISA method.
