Seven protein concentrates made on a pilot-scale in Japan from alfalfa, oats, and ryegrass, were nvestigated. The protein concentrates were precipitated by heat and dried by lyophilization or by praying. An investigation of a commercial product obtained from alfalfa without or with the eddition of natural red pigment in the ratio of 50 : 5 and 50 : 20, was also included. The highest content of phenolic compounds (1.52%) was found in alfalfa concentrate dried by lyophilization, the lowest content was noted in ryegrass concentrate dried by spraying (0.36%). The presence of natural pigments increased the phenolic compounds content - even three times in case of the preparation with the addition of pigment in 50 : 20 ratio. The solubility of protein was poor in all concentrates. In most cases only fraction II (protein soluble in NaOH) was obtained for all concentrates. Protein content of this fraction was found to be the highest (13%) in oats concentrate.
