Przebadano 37 gatunków konserw rybnych na zawartość ołowiu, kadmu, cynku i miedzi. Zawartość metali (oprócz kadmu) była niższa od przewidywanych normami poziomów tych pierwiastków dla przetworów rybnych.

Concentrations of lead, cadmium, zinc and copper in canned fish were determined by atomic absorption spectrometry (AAS). The following average values related to wet weight were found: for canned fish in jelly - lead from 0.040 mg/kg (herring in jelly) to 0.236 mg/kg (mackerel in jelly), cadmium from 0.014 mg/kg (trout in jelly) to 0.121 mg/kg (cod in jelly), zinc from 5.50 mg/kg (mackerel in jelly) to 18.63 mg/kg (salmon in jelly), copper from 0.70 mg/kg (cod in jelly) to 2.10 mg/kg (salmon in jelly); for canned fish in oil - lead from 0.019 mg/kg (herring in oil) to 0.235 mg/kg (sardine in oil), cadmium from 0.026 mg/kg (trout in oil) to 0.194 mg/kg (lampreys in oil), zinc from 5.20 mg/kg (cod in oil) to 31.50 mg/kg (lampreys in oil), copper from 0.50 mg/kg (trout in oil) to 4.00 mg/kg (lampreys in oil); for canned fish in tomato sauce - lead from 0.014 mg/kg (herring in tomato sauce) to 0.189 mg/kg (carp in tomato sauce), cadmium from 0.028 mg/kg (roaches in tomato sauce) to 0.155 mg/kg (sprat in tomato sauce), zinc from 6.60 mg/kg (mackerel in tomato sauce) to 36.50 mg/kg (sprat in tomato sauce), copper from 0.76 mg/kg (flounder in tomato sauce) to 4.50 mg/kg (several species of small fresh-water fish in tomato sauce); for canned fish in vegetables - lead from 0.026 mg/kg (carp in vegetables) to 0.194 mg/kg (salmon in vegetables), cadmium from 0.028 to 0.112 mg/kg (carp in vegetables), zinc from 3.65 mg/kg (silver carp in vegetables) to 18.25 mg/kg (herring in vegetables), copper from 0.55 mg/kg (carp in vegetables) to 2.23 mg/kg (salmon in vegetables); for other preserved fish - lead from 0.014 mg/kg (Szczeciński fish goulash) to 0.595 mg/kg (fish livers), cadmium from 0.025 mg/kg (Szczeciński fish goulash) to 0.195 mg/kg (fish pie), zinc from 6.85 mg/kg (mackerel salad in piquant sauce) to 33.00 mg/kg (fish pie), copper from 0.95 mg/kg (Szczeciński fish goulash) to 13.25 mg/kg (fish livers). Our results in general are comparable with the literature data. In 98% of all canned fish samples cadmium contents were above the limit admissible in Poland. Lead and copper content in fish livers was above the limits admissible in Poland. Zinc content in the canned fish was within the limit admissible in Poland.
