In the presented paper the effect of ascorbic acid and beta carotene on the detectability of nitrates and nitrites in some vegetables, was investigated by Griess method. Experiments were carried out using nitrates and nitrites standard solutions, and parsley, radish, and carrot homogenates fortified with acsorbic acid or beta carotene. Significant dependence of nitrites detectability upon the ascorbic acid concentration, and decreased nitrates detectability in the presence of vitamin C, was found. Nitrates detectability was also found to depend on the presence of beta carotene (decreased detectability by about 24%). Moreover, high nitrates concentrations were shown to decrease beta carotene detectability by about 13%. These findings indicate bidirectional interaction of nitrates and beta carotene.
