The potential of immunochemical methods to be applied for the classification of wheat species was verified. The experimental material was: common wheat grain of different cultivars, grain of the cross common by durum wheat, durum wheat grain and wheat grain samples of unknown species. Pasta samples of different common wheat flour content were also tested. Three immunochemical kits for wheat species classification were used: Durotest P, Pasta Quality Control (the quantity tests - ELISA) and membrane kit - Durotest S. The results indicate that the absorbance values depend on the cultivar of common wheat grain. In the case of the cross common by durum wheat the results are similar to those obtained for common wheat grain. Those immunochemical methods allow the discrimination between common and durum wheat grain quickly and unmistakably. The results of quantity tests show that it is possible to determine common wheat flour content in pasta products at the level of 2%.
