W artykule przedstawiono obowiązujące definicje biofilmów oraz krótką charakterystykę struktury biofilmów. Opisano mechani­zmy i czynniki wpływające na oporność drobnoustrojów żyjących w biofilmach. Omówiono etapy powstawania biofilmów oraz stosowane i dopiero -wprowadzane metody ich usuwania z powierzchni produkcyjnych wprzemyśle spożywczym.

The work presents current definitions of biofilms and short characteristics of their structure. It describes the mechanisms and factors influencing the resistance of microorganisms li­ving in biofilms. Moreover, it discusses the stages of biofilms formation and the applied, as well as recently introduced methods of their removal from production surfaces in food industry.
