Zawartość analizowanych składników w koprze zależała od odmiany i terminu uprawy. Azotanów(V) w części liściowej stwierdzono 669-1732 mg, a w liściach łącznie z ogonkiem liściowym 1265 - 4205 mg NO3- /1000 g, azotanów(III) odpowiednio 0,31-0,94 mg i 0,21-0,53 mg NO3-/1000 g, zaś szczawianów 39-187 mg i 32-164 mg/100 g. Najmniej azotanów kumulowała odmiana Amat, a szczawianów Lukullus. Wyraźnie wyższy poziom azotanów i szczawianów notowano w ostatnim, wrześniowym zbiorze.

The studied material comprised usable parts of dill plants (varieties Amat, Ambrozja and Lukullus) grown in five periods from spring to autumn. Dill was sown on 10th April, 10th May, 10th June, 10th July and 10th August. It was harvested when the plants were 25 cm high. The content of nitrates, nitrites and total oxalates was determined in leaves alone and in leaves with petioles. The maximum deviation of the analysed component from the average value was determined for the individual varieties. Young dill plants contained fairly large quantities of nitrates (this refers in particular to leaves with petioles), moderate amounts of oxalates, and low levels of nitrites. Nitrate content in 1000 g of leaves alone varied between 669 and 1732 mg, while the extreme deviations from the mean value ranged between -36% and +65%. For leaves with petioles, the respective values were 1265 mg to 4205 mg and -52% to +43%. The content of oxalates in the leaves alone varied between 39 mg and 187 mg oxalic acid per 100 g, and in the leaves with petioles between 32 mg and 164 mg, while the respective maximum deviations from the mean values were -62% to +83% and -64% to +86%. Among the examined varieties, Amat accumulated the smallest amounts of nitrates, and Lukullus had the lowest levels of oxalates, the differences being rather slight. The greatest content of nitrates was found in the latest grown plants, i.e. those from the September harvest.
