Traceability (product tracing) in the food and feed chain, required by Article 18 included in the Regulation (EC) No. 178/2002 of 28 February 2002, is also one of the basic areas of every food quality and safety management system. This paper summarizes some selected aspects of traceability during foodstuffs manufacturing. Traceability as a basic element of food quality and safety management systems (ISO, BRC, IFS and GLOBALGAP) is, among others, required for the effective management of nonconforming/unsafe products. In the article record keeping as a fundamental area for a traceability system was stressed, while the belt code system GS1 (EAN/UPC) and RFID system were presented as the cheapest and the most effective tools for automated identification and monitoring of food and food products. The paper also describes some elements of the ISO 22005: 2007 standard which requires for a traceability system to document product history and/or its location within the food and feed chain. According to the ISO22005 standard, a proper traceability system should identify a cause of nonconformity and should facilitate product withdrawals.
