The composition of the essential oils of Foeniculum vulgare Mill. var. dulce Mill. cv. Shumen, obtained by hydrodistillation, steam distillation and hexane extraction, respectively, was analyzed by GC/MS. By steam distillation was obtained lower yield of oil (1,01%), and by extraction - the highest (4,02%). The composition of the essential oils, obtained by hydrodistillation and extraction is similar, and the anethole content is 74,67% and 69,32%, respectively. In the oil, obtained by steam distillation the quantities of anethole and fenchone are reduced - 54,94% and 15,09%, respectively.

Skład olejku eterycznego otrzymanego z Foeniculum vulgare Mill. var. dulce Mill. cv. Shumen przy użyciu destylacji wodnej, destylacji ciśnieniowej i ekstrakcji heksanem analizowano za pomocą GC/MS. Po destylacji ciśnieniowej otrzymano mniejszą wydajność olejku (1,01%) niż po ekstrakcji (4,02%). Skład olejku eterycznego po destylacji wodnej i po ekstrakcji był podobny. Głównym składnikiem w obu przypadkach był anetol w ilości odpowiednio 74,67 i 69,32%. W olejku uzyskanym za pomocą destylacji ciśnieniowej zawartość anetolu i fenchonu była niższa i wynosiła 54,94 i 15,09%.
