The objective of this study was to check the Hughes and Segerlind procedure to determine Poisson's ratio for carrot roots and to determine the influence of storage time and parameters of experiment on its value. The procedure requires two uniaxial compression tests. In presented investigations the first cylindrical shaped sample was compressed axially inside a rigid die. The second sample coming from the same root was compressed without restrain. Measurements of Poisson's ratio were carried out for five storage times and for three stress levels. As a result of the experiment the average values of Poisson's ratio were found to range from 0,39 to 0,45.
