Niniejszy artykuł przeglądowy prezentuje informacje na temat trzech najczęściej uprawianych w Polsce grzybów wyższych: Agaricus bisporus, Pleurotus ostreatus i Lentinula edodes. Skoncentrowano się przede wszystkim na wartości żywieniowej oraz substancjach aktywnych biologicznie syntetyzowanych w owocnikach wymienionych gatunków. Liczne badania przeprowadzone na owocnikach grzybów wskazują, że są one bogatym źródłem związków aktywnych biologicznie, a także są cenne z punktu widzenia żywieniowego

This review presents the information on three mushroom species most frequently cultivated in Poland: Agaricus bisporus, Pleurotus ostreatus and Lentinula edodes. It is mainly focused on nutritious value and biologically active substances synthesized in the mentioned species. Numerous pieces of research conducted on mushroom fruiting bodies indicate that they are a rich source of biologically active substances and have high nutritious value.
