Celem pracy była ocena wpływu dodatku nasion komosy ryżowej białej i czerwonej na wybrane cechy jakościowe chrupek kukurydzianych. Materiałem do badań były chrupki kukurydziane, bez dodatków, z 5 i 10% dodatkiem nasion komosy ryżowej białej oraz 5% dodatkiem nasion komosy czerwonej. Do wytworzenia chrupek użyto jednoślimakowego ekstrudera typu S45A-12-10U (Metalchem, Gliwice, Polska). W chrupkach oceniono cechy geometryczne, barwę, twardość, strukturę oraz wodochłonność. Stwierdzono, że dodatek nasion komosy ryżowej białej nie powodował znaczących zmian jakościowych, podczas gdy dodatek nasion komosy ryżowej czerwonej skutkował zmniejszeniem objętości, wodochłonności, ekspansji i sprężystości chrupek kukurydzianych

The aim of the study was to assess the effect of quinoa seeds addition on the selected quality properties of corn puffs. The research material was corn puffs, with no additions, with 5% and 10% addition of white quinoa seeds and 5% addition of red quinoa seeds. The corn puffs were obtained in a single screw extruder type S45A-12-10U (Metalchem, Gliwice, Poland). The geometrical features, color, hardness, structure and water absorption of corn puffs were tested. It was found that the addition of white quinoa seeds did not cause significant qualitative changes, while the addition of red quinoa seeds resulted in a reduction in the volume, water absorption, expansion and elasticity of corn puffs
