This paper introduces issues associated with cleaning the surface elements of machines in food industry with high–pressure stream of water–ice. It describes the use of this technology in the food industry, and the results achieved by the action of jets on the cleaned surface. Research work was carried out on prototype test stand, consisted of a stationary hydromonitor equipped with a three–plunger water pump. The aim of this study was to identify and analyze the effectiveness of the use of dry ice in the high–pressure surface cleaning elements of machines in food industry. The effects of the research work summarized in the graphic form, and conducted a discussion about the usefull of this technology during surface cleaning elements of machines and equipment in food industry.
