Preservation of biomass of bacteria from Lactobacillus plantarum species in the process, which covers mixing the bacteria with wet carriers such as soluble potato starch, glucose, lactose and saccharose and then, their granulation and drying in fluidized bed dryer causes a considerable depletion of bacterial cells what, in consequence, results in a quick decrease of biological activity of the preparations during their storage. The addition of protective substances – sorbitol and betaine – to biomass before its mixing with the carriers does not eliminate the lethal effect during the storage; one favourable effect of the influence of the mentioned substances results only in the rise of survivability by ca. 30% during hydration. The survival rate of bacterial cells during 12 months of storage remains still low, i.e. it is found on the level lower than 10%. It was found that modification of technology, consisting in separate performance of granulated carrier with a specified composition and then, carrying the biomass over it during the fluidization process at temperature of 30-33°C, causes a small improvement of survivability of bacteria during hydration but a considerable rise of the survivability during the storage of the preparations. The number of bacteria in the preparations, performed in two stages was decreased by less than 20% during 3 months of storage under refrigeration conditions (temperature of 8°C) whereas in the preparations containing the protective substances, but produced in one stage, the number of bacterial cells was decreased by more than 80% after the same period of storage.
