Produkty bezglutenowe stanowią podstawę diety eliminacyjnej będącej jedynym sposobem leczenia osób z nietolerancją glutenu. Obowiązujące obecnie w Unii Europejskiej i Polsce regulacje prawne dotyczące tej grupy produktów spożywczych zwiększają bezpieczeństwo ich stosowania, a coraz większy wybór produktów bezglutenowych ułatwia osobom chorym codzienne bilansowanie jadłospisów. Wśród produktów bezglutenowych na polskim rynku wciąż jednak dominują produkty bazujące na skrobi pszennej bezglutenowej, o mniejszej wartości odżywczej, a dużą popularnością cieszą się bezglutenowe przekąski węglowodanowo-tłuszczowe. Wartość odżywczą diety bezglutenowej poprawiłoby wzbogacanie lub fortyfikowanie żywności bezglutenowej, a jej większa dostępność w średnich punktach handlowych i gastronomicznych ułatwiłaby zbilansowanie jadłospisów.

Gluten-free products are the basis for the elimination diet which is the only way to treat people with gluten intolerance. The currently existing legal regulations of food products in the European Union and Poland increase safety of their use, and a growing choice of gluten-free products makes celiac people easier to balance their daily menus. Gluten-free products in the Polish market are still dominated by gluten-free wheat starch-based products, with worse nutritional value and trace gluten content, and very popular are gluten-free snacks rich in simple sugars and saturated fat. Nutritional value of gluten-free diet may improve enrichment or fortification of gluten-free products, and their widespread presence in medium-sized grocery stores and catering facilities could help balance an everyday menu.

Продукты без глютена представляют собой основу элиминационной диеты, являющейся единственным способом лечения лиц с непереносимостью глютена. Действующие в настоящее время в Европейском Союзе и в Польше правоположения, касающиеся этой группы продуктов питания, повышают безопасность их применения, а все больший выбор продуктов без глютена облегчает больным целиакией повседневное балансирование рационов. В числе безглютеновых продуктов на польском рынке все же по-прежнему преобладают продукты, базирующиеся на пшеничном безглютеновом крахмале, с меньшей питательной ценностью, большую же популярность завоевали безглютеновые закуски, содержащие углеводы и жиры. Питательную ценность безглютеновой диеты усовершенствовало бы обогащение и укрепление безглютеновых продуктов питания, а их бóльшая доступность в торговых точках средней величины и предприятиях общественного питания облегчила бы сбалансирование рационов.
