W latach dziewięćdziesiątych nastąpiły w Polsce zasadnicze zmiany w wielkości produkcji i w zagospodarowaniu ziemniaków. Produkcja ziemniaka obniżyła się w porównaniu z produkcją w latach siedemdziesiątych i osiemdziesiątych o około 50%. Równocześnie można zauważyć systematyczną poprawę wartości konsumpcyjnej i przetwórczej ziemniaka. W pierwszej połowie lat dziewięćdziesiątych na polskim rynku pojawiły się przetwory ziemniaczane dotychczas nieprodukowane w kraju (np. czipsy) lub produkowane w niewielkich ilościach (frytki). Systematycznie, w miarę pojawiania się nowych zakładów przetwórczych w Polsce, wzrastała produkcja przetworów ziemniaczanych i w roku 2003 na cele spożywcze zostało przerobionych 650 tys. ton ziemniaków. W następnych latach należy się spodziewać dalszego zwiększenia przerobu ziemniaka na cele spożywcze, zważywszy że np. w Holandii przerabia się na ten cel ponad 3 mil ton. Półprodukty i produkty ziemniaczane zawierają te same składniki odżywcze co ziemniaki, tylko w różnych ilościach w zależności od wyrobu lub są wzbogacane o inne jeszcze składniki, np. o tłuszcz. Część cennych składników ziemniaka ulega degradacji w procesach termicznych i bezpowrotnie zmniejsza wartość odżywczą produktu. Ilość substancji toksycznych zawartych w ziemniaku (np. glikoalkaloidy, azotany) podczas przerobu zmniejsza się i wyroby gotowe zawierają kilkakrotnie mniej tych substancji.

In the 1990s significant quantitative changes were observed in potato production and management in Poland. Potato production was 50% lower as compared to that noted in the 1970s and 1980s. At the same time, the quality of potatoes destined for consumption and processing was improved. In the first half of the 1990s domestic potato products, like chips and in lower amounts French fries appeared on the market. Systematically, new potato processing plants were built, so that in 2003 the amount of potatoes used for processing reached 650, 000 tons. In the following, years, some further increase is expected, especially, considering the fact that in the Netherlands over 3 million tons of potatoes are used for processing. The nutrients of potato semi- and finished products are comparable with those of potatoes, although their quantities vary, depending on the product. Some of them are enriched with some components, e.g. fat. Some valuable nutrients are degraded during thermal processes, and in consequence, the nutritive value of the product is irreversibly reduced. The quantity of toxic substances present in potatoes (e.g. glycoalcaloids and nitrates) decreases during processing, so that their content in the finished product is several times lower.
